Ingredients:
1 lb ground beef (or your choice of ground meat)
1 onion, diced
2 cloves garlic, minced
1 bell pepper, chopped
1 can (14 oz) diced tomatoes
1 can (14 oz) kidney beans, drained and rinsed
1 can (14 oz) black beans, drained and rinsed
1 can (14 oz) corn, drained
2 cups beef or vegetable broth
2 tbsp chili powder
1 tsp cumin
Salt and pepper to taste
Shredded cheese, sour cream, and chopped green onions for garnish (optional)
Instructions:
Heat a large skillet over medium-high heat. Add the ground beef and cook until browned. Drain any excess fat.
Add the diced onion, minced garlic, and chopped bell pepper to the skillet. Sauté for a few minutes until the vegetables soften.
Stir in the diced tomatoes (with their juice), kidney beans, black beans, and corn.
Add the chili powder, cumin, salt, and pepper. Mix well to combine all the ingredients.
Pour in the beef or vegetable broth and bring the mixture to a simmer. Reduce the heat to low, cover, and let it simmer for about 15-20 minutes, stirring occasionally.
Taste and adjust the seasoning if needed. If you like your chili spicier, you can add more chili powder.
Once everything is heated through and well blended, your skillet chili is ready to go!
