Whether you're cooking over a campfire or your kitchen stove, a cast iron skillet is a trusty companion for creating hearty, nourishing meals. Today, we're sharing a simple yet delicious recipe that’s perfect for fueling your outdoor adventures or enjoying a cozy night in.
Skillet Seared Salmon with Garlic Lemon Butter Sauce
Ingredients:
4 salmon fillets (skin-on)
2 tablespoons olive oil
Salt and pepper, to taste
3 tablespoons unsalted butter
2 cloves garlic, finely minced
1 lemon, juice and zest
Fresh parsley, chopped (for garnish)
Instructions:
Prep the Salmon:
Remove the salmon from the refrigerator about 15 minutes before cooking to bring it to room temperature. This ensures even cooking.
Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.
Heat the Skillet:
Place your cast iron skillet over medium-high heat and add the olive oil. Allow it to heat until the oil shimmers.
Cook the Salmon:
Place the salmon fillets skin-side down in the skillet. Cook for 3-4 minutes until the skin is crispy.
Gently flip the salmon and cook for another 3-4 minutes or until the desired doneness is reached.
Remove the salmon from the skillet and set it aside on a plate.
Make the Sauce:
In the same skillet, reduce the heat to medium. Add the butter and garlic, sautéing until the garlic is fragrant but not burnt.
Stir in the lemon juice and zest, scraping up any browned bits from the bottom of the skillet.
Cook for an additional minute, then remove from heat.
Serve:
Spoon the garlic lemon butter sauce over the salmon fillets.
Garnish with chopped parsley and serve with your choice of side - we recommend a simple green salad or roasted vegetables.
